2) Hand washing is the single most important measure for preventing the transmission of infection.

FOOD HYGIENE

Fresh and cooked foods must be handled separately to prevent cross contamination.
Fresh food has surface bacteria and other micro-organisms.
Cooked food is the ideal growth media for such organisms.
