FOOD HYGIENE
Hot water hand washing is mandatory throughout the food industry.
Fresh and cooked foods must be handled separately to prevent cross contamination.
Fresh food has surface bacteria and other micro-organisms.
Cooked food is the ideal growth media for such organisms.
To meet the reponsibilty of handling food:-
1) Use disposal gloves
2) Hand washing with soap under hot running water
3) A ten second wash in hot soapy water is MORE effective in getting rid of bacteria than alcohol rubs or gells.
See the University of North Carolina press release (March 10th 2005).
